I am a fan of breakfast.
I think one like this is more something you would have for brunch or lunch or all three in one.
Weekend breakfast.

Scrambled Eggs Mel's Way
with Grilled Tomatoes and Brown Sugar Bacon
Serves 2
Scrambled eggs
2 large eggs
2 tbsp double cream
2 spring onions/scallions
1/4 green pepper
1-2 mushrooms
1 tbsp jarred jalapeƱos
1- 1 1/2 cups grated strong cheddar
2 large vine tomatoes
- Slice up your veggies fairly small.
- Heat some oil in a pan and lightly fry
- Cut your tomatoes in half , season and put under grill
- Crack your eggs into the pan and 2 tbsp of double cream (you could use milk instead, but that's far too sensible for Saturday morning)
- Use a whisk to scramble the eggs and combine with the vegetables
- Sprinkle in your cheese and stir
- Add the jalapeƱos last thing, this is so that you can taste the sharpness amongst the rest of the eggs
- Serve on buttered english muffins with grilled tomatoes on top and if you're feeling super special...brown sugar bacon.
Brown Sugar Bacon
4 rashers lean smoked back bacon/ smoked streaky bacon
2 tbsp soft brown sugar
- Line baking sheet with greaseproof parchment and lightly grease
- Sprinkle generously with brown sugar
- Bake on top shelf of oven for 10-15 mins until crispy
- Easy!
- You can also add this sweet bacon to pancake and waffle batter, just allow to cool and chop on a board. (My friend Lyzi from being little recently found some chocolate chip and bacon cookies online too... next recipe, perhaps!)
